Golden Curry Chicken (Weeknight Version)

Ingredients

• 2 lbs bone-in chicken thighs (or chicken breast if preferred)

• 2 tbsp neutral oil (avocado or vegetable)

• 1 medium onion, diced

• 2 cloves garlic, minced

• 2 medium potatoes, cubed

• 1 large carrot, chopped

• 1 cup water

• Salt (optional, to taste — Curry Complete is balanced)

• Cooked white rice, for serving

• Garnish: sliced scallions or cilantro


Instructions

1. Season the chicken. Toss the chicken with Curry Complete until fully coated. Let it rest for 10 minutes.

2. Build the base. Heat oil in a pot or deep skillet over medium heat. Add onion and sauté until soft. Add garlic and cook for 30 seconds.

3. Bloom the curry. Add seasoned chicken. Brown lightly on both sides (about 2–3 minutes per side).

4. Simmer. Add potatoes, carrots, and broth. Bring to a gentle boil, then reduce the heat and simmer uncovered 25–30 minutes, until the chicken is tender and the sauce thickens naturally.

5. Finish & serve. Taste and adjust salt if needed. Serve over rice. Garnish lightly.
